Pikelet Recipe

Here is a Pikelet Recipe from the website Kidspot. Great, simple and easy recipe when you have hungry kids for morning tea. 




Ingredients:
Pikelet Recipe Kidspot Kitchen                           

2 cups self-raising flour
¼ teaspoon salt (optional)
1/3-cup caster sugar
1 egg
1-cup (250mL) milk
1-tablespoon butter

Method:

           Sift flour and salt, add sugar, drop unbeaten egg into the middle of the bowl and stir.
           Slowly add enough milk to make a thick batter. Beat well until smooth.
           Heat a non-stick pan over a medium heat, melt ½ teaspoon butter and drop heaped       tablespoonfuls of mixture into the pan.
           I cooked about 5 at a time. When bubbles appear on the surface, turn the pikelets and allow to brown on the second side.
           Transfer pikelets onto a plate and cover with a cloth while you finish cooking the remainder.

We decided for my son's little school friends birthday party that we would design the wrapping paper to match the cards I made yesterday. Using some white paper and adding a layer of coloured paper, pink ribbon and white stencil stickers for the name. Emma loved the present.

Hand Made Cards


I decided to try my hand at some simple Hand Made Cards. I find cards to be quite expensive and often not quite what I am after. I have started simple with some paper and ribbon on plain white card. I gave one to my girlfriend this morning with some magnolia cup cakes, and she loved it. She lives in Mt Eliza overlooking the gorgeous country side, and when I visited her this morning, it was so peaceful, reminding me to slow down and enjoy the little things.

Don't tell anyone !

My wonderful friend and old professional mentor, realised that I was just starting out on my creative journey of baking. I phoned her up the day before New Years Eve and said, "quick I need a cake recipe and I have limited ingredients, and I have 10 adults and 8 kids coming for dinner. I was out of town, away at a beach house along the Great Ocean Road,  where we were staying for the summer. She asked me to promise to keep this recipe a secret, but that it was the best cake that she had ever baked. Keeping in mind this woman bakes everything from scratch with the most freshest and organic products. Don't tell anyone but its a "Packet Cake". I believed her when she said it would be delicious, because she is very particular about her food, but how could I make a "packet cake". Well I made it , and my friends loved every mouthful. It is a Rasberry swirl cake. It is to die for, and there is certainly a place for it in our house hold. But hey don't tell anyone!

Happy Australia Day!

What a lovely day with beautiful friends and family. In the past I have not normally made too much of Australia day, but this year, I wanted to do something with my friends and family. I love living in Australia and I love raising my kids in this great country. I might of got a little excited with the flags, but hey the bubbles and beer went down nicely by all. I decided to extend my limited skills to Lamingtons, and they went down like a treat. Not sure that I realised how long they would take to make, maybe that is why Donna Hay suggested you buy a sponge rather than trying to make one if you wanted a quicker option. I made smaller Lamingtons than suggested as I find them very rich in flavour and I think everyone tended to agree. I also made magnolia mini cakes for dessert and for the kids to take home, recipe a la Lou ( thank you Lou). Vegemite sandwiches for the kids as an entree prior to the typical Aussie BBQ for lunch. A new salad, added to the mix made by Penny, parsnip and carrot with feta, delicous.I have told her to photograph it for the blog and send us the recipe, it was sensational. Thank you gorgeous friends and family for a really lovely day, and Happy Australia Day!

Getting ready for Australia Day 2011!

Thought I would start getting into the spirit of Australia Day, especially with inquisitive minds asking questions like there is no tomorrow. I was going to go for the Violet Crumble but thought that may be a little too naughty, considering we have 2 days to go and I still have a "New Year and Christmas food and drink hangover" as my husband likes to put it. Decided instead to go for the Minties. I ventured out to the good old local $2 shop and started the flag domination for the house. The start of things to come prior to Wednesday....

Water Tray

I have decided to make life a little more easier and get more organised , hoping this will save more time to do the things I really want to do, rather than cleaning tidying and washing up. With my 6 year old sons new found independence, which he loves through his ability to ride his bike around the block and the neighbourhood kids , we have a new found revolving door of kids requiring drinks and refueling. I just love it. Our door is always open and the kids go from house to house looking for each other to come out and play. It reminds me of the good old days. Now I'm feeling old. 
I decided to have a water tray in the kitchen close to that revolving door so that the kids and parents can just help themselves to a drink. Love the idea.

When Invited to dinner

I have been quite inspired by a number of friends and family who are excellent chef's, creative artists and those that have an eye for design. I am surrounded by them. Well you have inspired me. Tonight I was invited to some friends for dinner and I insisted on bringing something. My friend of course, said " just bring yourselves". I feel I always must take something and a little thank you gift for the host. So a little creative I got. I made a potatoe salad and added a bow for brightness. Simple, but she loved it. A jar with a few chocolate love hearts, being that Valentines day is not that far away and also, she is a very special friend who I adore. And of course , never an evening without a bottle of bubbles.

I decided to start a blog, as I wanted to share my experiences , ideas and celebrate the simple things in life that make life so special. It is about being a mum, a wife, a sister , a friend, a daughter, a professional, a student, and a woman. I have learnt to be who I am through many wonderful people in my life and would like to share my learnings and the wonderful experiences of living in Melbourne, Australia and the journey along the way.
